Blueberry Delight Recipe

4 c. graham cracker crumbs
1 c. butter
2 (8 oz.) pkg. cream cheese
2 c. confectioners' sugar
2 tsp. vanilla
6 c. whipped topping
2 cans blueberry pie filling (or make your own with the recipe below)

Blueberry filling:
4 c. blueberries
c. sugar (I use 1/4c.)
2 TB cornstarch
1 tsp. cinnamon (I leave out)
tsp. salt
tsp. nutmeg
tsp. lemon juice

Mix graham cracker crumbs and butter and press into 9 x 13 pan. Mix well the cream cheese, confectioners' sugar, vanilla, and whipped topping. Place over crumbs. Spread blueberry pie filling on top. Note: For a smaller family cut the recipe in half, and use the same size pan.

Cook blueberries with sugar, cornstarch and juice. Add remaining ingredients. Note: This is also excellent over pancakes! Just add a little water.
