1 TB vegetable oil
1 lg. green bell pepper, finely chopped
1 lg. onion, finely chopped
1½ pkg. taco seasoning
vegetable oil, enough for deep frying
3 TB flour
4 boneless, skinless chicken breasts, washed
16 oz. Cheddar or Colby cheese, shredded
olives, sliced, opt.

Preheat oven to 350º. Sauté bell pepper and onion in 1 Tablespoon oil until done. Add ½ of the package of taco seasoning and 1 tablespoon water; mix well and set aside. Prepare enough oil for deep frying. Mix the other ½ of the taco seasoning with the flour; dip chicken into flour mixture. Fry until a thin crust forms, about 2 minutes each. Place chicken into a 9” x13” pan. Spread the vegetable mixture over chicken and bake until chicken is done, about 25 to 30 minutes. Spread cheese and olives on top of chicken and place back into oven until cheese melts. 4 servings.
