Ingredients: 3 cups potatoes - cooked whole and then diced or you can use 1 (32-ounce) bag southern-style diced frozen hash browns thawed 3 Tbsp. butter 3 Tbsp. flour 1 1/2 tsp. salt 2 cups milk 1/4 tsp. pepper 2 Tbsp. pimientos, chopped 2 Tbsp. parley, chopped 1/4 tsp. paprika 2-4 Tbsp. butter 1/2 cup bread crumbs 1/2 cup cheddar cheese, grated

Directions:Cook potatoes in skins in boiling water until tender; peel and dice. Melt butter and add flour, salt, and pepper. Stir into a smooth paste. Add milk and cook stirring constantly until mixture comes to a boil. Sin in parsley and pimientos and then add potatoes. Combine well.
Pour mixture into a 1 1/2 qt. casserole dish. Melt 2-4 Tbsp. butter in saucepan and add bread crumbs. Let cool. Combine bread crumbs, cheese and paprika.
Sprinkle crumb topping around edge of casserole. Bake in 400 degree oven for 30 minutes. |
