3 cups potatoes - cooked whole and then diced or you can use 1 (32-ounce) bag southern-style diced frozen hash browns thawed
3 Tbsp. butter
3 Tbsp. flour
1 1/2 tsp. salt
2 cups milk
1/4 tsp. pepper
2 Tbsp. pimientos, chopped
2 Tbsp. parley, chopped
1/4 tsp. paprika
2-4 Tbsp. butter
1/2 cup bread crumbs
1/2 cup cheddar cheese, grated

Cook potatoes in skins in boiling water until tender; peel and dice. Melt butter and add flour, salt, and pepper. Stir into a smooth paste. Add milk and cook stirring constantly until mixture comes to a boil. Sin in parsley and pimientos and then add potatoes. Combine well.

Pour mixture into a 1 1/2 qt. casserole dish. Melt 2-4 Tbsp. butter in saucepan and add bread crumbs. Let cool. Combine bread crumbs, cheese and paprika.

Sprinkle crumb topping around edge of casserole. Bake in 400 degree oven for 30 minutes.

Casserole can be made ahead of time and kept in the refrigerator and then reheated at 350 degrees for 50 minutes before serving.
