½ lb lasagna noodles (use Rice noodles for Chris)
1 medium onion, chopped
2 Tbsp olive oil
1 lb ground beef
1 garlic clove, minced
1 can diced tomatoes
1 6 oz can tomato paste
1 Tbsp minced parsley
½ tsp oregano
½ tsp basil
1 tsp salt
⅔ lb Monterrey Jack cheese
⅓ lb Cheddar cheese
6 Tbsp Parmesan cheese

Directions:
Directions:
Cook noodles as directed. Saute onion in olive oil until clear. Add meat; cook until gray. Add next 7 ingredients; simmer 5 minutes. In large buttered casserole, alternate layers of noodles, meat sauce & grated cheeses. Repeat and top with Parmesan. Bake 35 minutes at 350º. Serves 6-8.
