c. unsalted butter, melted
c. buttermilk
2 large eggs
1 T. pure vanilla extract
2 c. all-purpose flour
c. sugar
2 tsp. baking powder
tsp. baking soda
tsp. salt
1 c. mini chocolate chips

Directions:
Directions:
Preheat the oven to 350. Grease a mini muffin pan or use paper liners. In a bowl, whisk together the melted butter, buttermilk, eggs, and vanilla until smooth. In another bowl, stir together the flour, sugar, baking powder, baking soda, and salt. Make a well in the center of the flour mixture, add the buttermilk mixture, and beat until smooth and well mixed, 1 to 2 minutes. Using a large silicone spatula, fold in the chocolate chips until evenly distributed. Do not over mix. Spoon the batter into each muffin cup, filling it level to its rim.
Bake the muffins for 8 to 12 minutes or until golden and springy to the touch. Transfer to a wire rack and let cool for 5 minutes. Makes about 40 mini muffins.
