1 c. oil
2 eggs
2 c. granulated sugar
1 tsp. vanilla
2½ c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
4 c. apples, cubed
butterscotch or chocolate chips, opt.

Apple Cake Topping:
½ c. brown sugar
½ c. granulated sugar
3 to 4 TB flour
1 c. water
¼ c. butter
½ tsp. vanilla

Directions:
Directions:
Mix together oil, eggs, sugar and vanilla. In a separate bowl mix flour, baking powder, baking soda, cinnamon and salt. Stir both mixes together, then stir in apples. Pour into greased 9” x 13” pan. Sprinkle chips on top. Bake at 350º for 15 minutes, then at 300º for 45 minutes. Cover with foil when you take out of oven. Variation: Omit cinnamon and chips. Add ¼ cup oil, 1 c. walnuts and use only 3 c. apples. Bake at 350º for 60 minutes and pour over the following topping.

Apple Cake Topping:
Cook sugars, flour and water over medium heat until clear and thick. Add butter and vanilla and pour over apple cake.
