1¼ c. boiling water and 1 c. quick oats OR
2 c. leftover oatmeal
½ c. butter
1 c. brown sugar
1 c. granulated sugar
2 eggs
1½ c. flour
1 tsp. nutmeg, opt.
1 tsp. cinnamon
1 tsp. baking soda
½ tsp. salt
1 tsp. vanilla

Praline Topping:
2/3 c. brown sugar
1 c. nuts, chopped
1 c. coconut
6 TB butter, melted
¼ c. cream
1 tsp. vanilla

Directions:
Directions:
If using quick oats, pour boiling water over oatmeal and let set 20 minutes. (If using leftover oatmeal omit this step.) Cream butter and sugar well. Add unbeaten eggs one at a time, beating well after each addition. Blend in oatmeal. Sift flour, spices, baking soda and salt together and fold in. Add vanilla. Pour into greased and floured 9” x 13” pan. Bake at 350º for 30 to 35 minutes. While cake is still hot spread on the Praline Topping.

Praline Topping:
Mix all ingredients together well. Spread on cake and broil for about 2 minutes, or until golden brown.
