4 sweet potatoes or yams
6 green tipped bananas
3 small limes
½ cup butter or margarine
¼ cup unsweetened pineapple juice
2 Tbsp. brown sugar

Directions:
Directions:
Parboil sweet potatoes in their jackets in boiling salted water just until tender, about 25 minutes. Drain; cool, and peel. Peel bananas. Cut potatoes and bananas into 1 to 1 ½ inch pieces. Peel limes and cut into wedges, then cut each wedge into half crosswise. Gently mix potatoes, bananas, and limes.

Melt butter in small sauce pan; stir in pineapple juice and sugar. Pour over vegetables. Gently heat vegetables, stirring gently for about 10 minutes.

Makes 6-8 servings.
