3 large heads Boston lettuce
3 large ripe avocados, peeled, putted, and cut into lengthwise slices
3 Tbsp. lemon juice
3 large bunches watercress
6 ripe kiwi fruit, pared and sliced
3 cups celery, cut diagonally
3/8 cup toasted sesame seeds

Trim lettuce, wash, pat dry on paper toweling. Tear into bowl. Sprinkle avocado slices with lemon juice. Remove large stems from watercress. Arrange avocado slices, watercress, kiwi rounds, and celery on lettuce. Sprinkle with sesame seeds. Shake dressing just before serving and pour over salad. Toss gently.

Makes 8-10 servings.
 

Pineapple-Lemon-Mint Dressing


Ingredients:

1 ½ cup vegetable oil
½ cup unsweetened pineapple juice
2 tsp. lemon peel
4 Tbsp. lemon juice
2 tsp. dried mint, crumbled
1 ½ tsp. salt
1 tsp. dry mustard

Directions:

Combine vegetable oil, pineapple juice, lemon peel, lemon juice, mint, salt, and dry mustard in a large screw-top jar. Cover, shake thoroughly. Refrigerate until ready to use.
