4 to 5 lbs. chicken
1 T. olive oil
kosher salt
pepper
1 lemon, thinly sliced
Fresh herbs (optional) rosemary, thyme, & parsley

Directions:
Directions:
Preheat oven to 425º. Drizzle oil and rub over skin. Season inside and out with salt & pepper. Place herbs and lemon inside chicken. Place chicken, breast side up in cast iron skillet. Roast 15 minutes and reduce temp to 375º. Cook until temp registers 165º, about 50 to 60 minutes. Let rest 15 to 20 minutes.
