Soft Pineapple Cookies Recipe

1 cup sugar
1 cup brown sugar
1 cup Crisco

2 eggs
1 tsp vanilla

4-1/2 cups flour
1 tsp baking soda
1/4 tsp salt

1 large can crushed pineapple (drained)

Cream first 3 ingredients
Add eggs and vanilla and mix thoroughly
Add dry ingredients and mix thoroughly
Add drained, crushed pineapple and mix by hand

Put on cookie sheet (I use pampered chef scoop for even sized cookies)

Bake at 400 8-10 min
