2 c. sugar
¾ c. light corn syrup
⅛ tsp. salt
2 c. heavy cream
1 tsp. vanilla

Directions:
Directions:
Combine sugar, syrup, salt, butter, and 1 c. cream in large heavy saucepan. Stir constantly until mixture comes to a full boil. Gradually add remaining cream so that boiling does not stop. Continue stirring to hard-ball stage. ( 250º F.) Rmove from heat. Stir in vanilla. Pour into 8-inch square pan. When cold, turn out on cutting board and cut ¾-inch squares.

A good candy thermometer is the best purchase you can make if you are going to be a candy maker. The first time I made this recipe I was 17. I did not have a candy thermometer so winged it. Put in the bottom of our small fridge freezer to try to set it up. I mean poured it in there. Ha It must have still been good, as my sister’s boyfriend scraped it off the freezer bottom and ate it. I have perfected this recipe over the next 47 years.
