1 pkg. garlic salad dressing mix (or one cup favorite garlic/Caesar style dressing)
½ cup sour cream
¼ cup chopped scallions
½ cup crumbled blue cheese
1 large or two small head cauliflower
2 slices crumbled cooked bacon
¼ cup chopped almonds, toasted

Parsley/Cilantro and lettuce garnish, if desired

Directions:
Directions:
Prepare dressing mix according to package directions (if necessary). Add sour cream gradually, stirring constantly. Add scallions and blue cheese; mix well. Chill. Remove outer leaves and stalks of cauliflower; cut off any blemishes. Wash well; trim off stem so cauliflower will stand level. Place in large saucepan; add 1 inch salted water. Cover; cook 20-30 minutes or just until tender. Drain and chill. Place on serving dish; cover with dressing. Sprinkle with bacon and almonds. Garnish base with parsley/cilantro and lettuce, if desired.

Makes 8-10 servings.
