½ lb. slab bacon, chopped
1 large onion, chopped
4 packages (10 oz each) frozen collard greens (4 lbs raw)
Salt to taste

Directions:
Directions:
Fry bacon in a large saucepan until crisp, remove pieces, and set aside. Saute onion in bacon drippings until golden. Add collard greens and enough water to cover greens. Cover and simmer until tender. Drain greens, season with salt, and serve sprinkled with bacon.

Makes 8-10 servings.
