1 lb. black beans
1 large onion, chopped
7 cups beef broth
Peeled rind of 1 lemon, cut in slivers
1 tsp. salt
Lemon slices
Red onion rings

Directions:
Directions:
Place beans in large saucepan and cover with cold water; add salt. Bring to boil, boil for 2 minutes. Remove from heat and let stand for 2 hours. Drain beans. Add onion, broth, and lemon rind to beans. Cover and simmer gently for 1 to 1 ½ hours or until beans are tender and liquid is almost absorbed. Salt and garnish with lemon slices and red onion rings.

Makes 8-10 servings.
