Sugar Cookies, gluten/milk free Recipe

Dry Ingredients:

3/4 c white rice flour
3/4 c amaranth flour
1/2 c. potato starn flour
1/2 c. tapioca flour
2 tsp. guar gum
1 c. sugar
1 tsp. baking powder

Wet Ingredients
1 c. Spectrum shortening
1 egg
2 tsp. pear juice
1 tsp. vanilla

Combine dry ingredients. Cream together wet ingredients, then add to the dry mixture. Once blended, place the dough in the refrigerator until firm (at least one hour).

Roll into dough into balls and press with bottom of glass. Additional sugar can be added to the top.

Bake at 350 for 12-14 minutes. Baking time could vary so watch the first batch.
