4-6 Boneless, skinless chicken breasts or 4-6 boneless, skinless chicken thighs
1 medium green pepper, chopped
1 can (14 1/2 oz) diced tomatoes with basil, oregano and garlic, undrained
1 can tomato paste
1/2 medium onion
1/2 cup chicken broth
1/4 cup dry red wine or chicken broth
1-2 garlic cloves
1/2 tsp salt
1/8 tsp pepper
2 T cornstarch
2T cold water

Directions:
Directions:
Place chicken in 5 quart slow cooker. Mix together green peppers, tomatoes, tomato paste, onion, garlic, broth, wine, salt and pepper. Pour over chicken. Cook covered on low 8-10 hours. Add mushrooms at end of cooking if you like.

In a small bowl, mix cornstarch and water until smooth. Gradually stir into slow cooker. Cook, covered, on high 30 minutes or until sauce is thickened.

Serve with your favorite pasta and red wine!
