2 eggs
4 tablespoons butter, melted
1 can cream-style corn (8.5-oz)
1 cup sour cream
1 cup yellow cornmeal
3 minced jalapenos
½ cup chopped onion
3 tablespoons chopped pimiento
4 tsp baking powder
¾ tsp salt
1 cup shredded sharp cheddar

Directions:

Place a well-oiled 9" cast iron skillet into a cold oven and heat to 400º. In large bowl, combine eggs and butter and work together with a fork. Stir in all remaining ingredients until well mixed. Remove skillet and pour batter into hot pan. Bake about 1 hour until firm to the touch. It will be deep golden brown.
