2 lb. fresh broccoli
3 c. Basic Chicken Stock
3 c. milk
1 c. chopped cooked ham
2 tsp. salt
1/4 tsp. freshly ground pepper
1 c. half and half cream
2 c. grated Swiss Cheese
1/4 c. butter

Directions:
Wash the broccoli and remove any leaves and coarse stem ends. Place the broccoli in a large kettle and add half the stock. Bring to a boil, then reduce the heat and cover. Simmer for 7 minutes or until the broccoli is just tender. Remove the broccoli from the stock with a slotted spoon and chop coarsely. Add the remaining stock, milk, salt and pepper to the stock in the kettle and stir well. Bring to a boil over medium heat, stirring occasionally. Stir in the cream, cheese, butter and broccoli and heat until the cheese is melted. Do not boil.

This comes from a very well-known restaurant in the south. My mother got this from them when she stayed there over 30 years ago. It is a family favorite.
