1 clove garlic, minced
1 large onion, diced
1 lb. cubed stew beef
4 potatoes, cubed
1/2 bunch celery, sliced
4-6 carrots, sliced
1/4-1/2 cup flour
4-6 cups beef broth

Directions:
Directions:
Toss the beef in flour to coat, sprinkle with salt and pepper

Heat oil in a dutch oven or pot.

Saute onion until translucent. Add beef and brown on all sides.

Add beef broth, garlic, and celery. Bring to a boil over medium high heat, reduce temperature to low heat, cover and simmer for 1-2 hours.

Add carrots and potatoes, continue simmering for 45-60 minutes until vegetables are tender.

You may want to experiment with other seasonings to liven this up a bit -- bay leaf, rosemary, thyme, marjoram, even 1/4 cup or so of red wine.
