8 Roma tomatoes
⅓ cup chopped fresh basil
cup grated parmesan cheese
1 to 2 tsp. minced garlic
1 tbsp. balsamic vinegar
tsp. salt
tsp. pepper
2-3 tbsp. olive oil
1 loaf French bread
8 oz. fresh mozzarella cheese (sliced or pearls)

Directions:
Directions:
Dice tomatoes and toss together with 1 tbsp of olive oil, basil, parmesan, garlic, balsamic, salt, and pepper. Slice french bread. Place slices on cookie sheet and brush with olive oil. Broil a few minutes until lightly toasted. Top with tomato mixture and pieces of mozzarella. Can serve as so or can place pan back under broiler until toppings are warmed.
