3 lb. of fresh salmon, skin on
2 Tbsp. Dijon mustard (can also use honey Dijon)
3 Tbsp. soy sauce
6 Tbsp. olive oil
1 tsp. minced garlic
Feta cheese crumbles (optional)

Directions:
Directions:
Preheat oven to 425ºF. Whisk together mustard, soy sauce, olive oil, and garlic. Place salmon skin side down on foil-lined baking sheet. Pour marinade over salmon and let sit for 10 minutes. Bake 4-6 minutes per ½-inch thickness of salmon (for 1 inch thick filet bake 8-12 minutes; for 1½ inch thick filet bake 12-18 minutes) or until fish is flaky. Serve immediately topped with feta cheese crumbles.
