6 Tbsp butter
1 Tbsp minced onion
1/2 cup flour
3 cups chicken broth
2 cups cooked wild rice
1/3 cup minced ham
1/2 cup finely grated carrots
3 Tbsp chopped slivered almonds
1/2 tsp salt (optional)
1 cup half and half
2 Tbsp dry sherry (optional)
minced parsley or chives

Directions:
Directions:
1. Melt butter in saucepan; sauté onion until tender.
2. Blend in flour; gradually add broth.
3. Cook, stirring constantly, until mixture comes to a boil; boil 1 minute.
4. Stir in rice, ham, carrots, almonds, and salt; simmer about 5 minutes.
5. Blend in half and half and sherry; heat to serving temperature.
6. Garnish with minced parsley or chives.
