1 1/4 c. graham cracker crumbs (16 crackers)
2 T. sugar
3 T. butter
(2) 8 oz. + (1) 3 oz. pkgs softened cream cheese
1 c. sugar
2 t. lemon peel
1/4 t. vanilla
3 eggs
1 c. sour cream

Directions:

Stir together graham cracker crumbs and sugar. Mix in butter thoroughly. Press mixture in bottom of 9" pan (I use a spring-form pan, easier to get out) Bake at 350 degrees for 10 minutes. Cool

Beat cream cheese. Gradually add 1 c. sugar, beat till fluffy. Add lemon peel, vanilla, and sour cream one at a time beating continuously. Beat in eggs one at a time. Pour over crumb mix. Bake 1 hour at 300 degrees till center is firm. Cool to room temperature, then place in refrigerator and chill 3 hours.

Use your imagination on toppings, whether traditional cherry pie filling to melted chocolate, caramel, & pecans (turtle cheesecake). Enjoy!
