2 cups boneless cooked chicken breast chunks
1 cup diced celery
1 cup cooked rice
1 (10 3/4 oz) can cream of mushroom soup
3/4 cup mayonnaise
1 cup sliced water chestnuts
1/2 cup sliced almonds, toasted
1 (2 oz. ) jar diced pimiento
1 tbsp. chopped onion
1/2 tsp. salt
1/4 tsp. black pepper
1/4 tsp. cayenne
2/3 cup shredded Cheddar cheese (optional)
Paprika ( optional)

Directions:

Mix all ingredients except cheese and paprika until well blended. Place in 2 quart casserole.
Bake, uncovered, at 350 F for 45 minutes. Garnish with cheese and or paprika during last 10 minutes of baking time.
