In a small skillet brown fries in oil. When they are well browned, push them toward the sides of the pan till a hole forms in the middle. Break to eggs into the hole, cover, and cook till eggs are at desired doneness. Slide onto plate or flat bowl. Serves one.

This was one of Jeannie's Saturday favorites--Saturday because I always had to work and it was the only day I had time to actually cook it. Sometimes she wanted it for lunch or supper.
