8 oz mozzarella cheese, shredded
2 Tbs chopped fresh basil
4-5 ripe tomatoes cut in 1/4" slices
1/4 extra virgin olive oil
Basic pastry dough - I use a pie shell

Directions:
Directions:
Preheat oven to 400. roll out pie crust on a pizza stone or cookie sheet. Spread bottom of pastry with Cheese and sprinkle with basil. Cover the top with tomato slices. Sprinkle tomatoes with salt and pepper and drizzle with olive oil. Back at 30 to 40 minutes. Garnish with fresh chopped basil. Slice in wedges and serve.
