* 1-1/2 cups whipping cream
* 1 pkg (3 oz ) cream cheese, softened
* 3/4 cup packed brown sugar
* 1 tsp pumpkin pie spice
* 1/4 tsp salt
* 1 can (15 oz ) pumpkin(not pumpkin pie mix)
* 1 pouch ( 2 bars ) Nature Valley crunchy pecan granola bars from 8.9 oz box
* 6 or 8 pumpkin shaped candies ,optional

In a large bowl beat the 1 1/2 cups whipping cream until soft peaks form and then refrigerate. In a medium bowl, beat the cream cheese, brown sugar, pumpkin pie spice and salt until smooth and creamy, about 2 minutes. On low speed, beat the pumpkin into the cream cheese mixture.
Using a rubber spatula gently fold 2 cups of the whipped cream into the pumpkin mixture. Spoon the mousse into 6 or 8 individual dessert dishes.
To serve, spoon a dollop of remaining whipped cream onto each serving. Coarsely crush the granola bars and sprinkle over each serving. Garnish with the candy pumpkins. Recipe makes 6 to 8 servings.
Note: 1) We also have used small graham cracker pie crusts and they worked well.
2) We also used Maple Brown Sugar granola bars and it was very good.
