Cake:
¼ cup Crisco
2 egg yolks
¾ cup flour
¼ cup milk
½ cup sugar
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla

Topping:
¾ cup honey
1 tablespoon butter
1 cup chopped pecans

Preheat oven to 350º
Grease and flour/sugar 8" square cake pan
Bake 25-30 minutes

Cake:
Cream Crisco with sugar until light; beat with egg yolks.
Sift or whisk dry ingredients.
To sugar/egg mixture--add dry ingredients alternately with milk .
Beat 2 minutes on medium.

Topping:
Combine honey and butter in a small saucepan; bring the mixture slowly to a boil; boil five minutes, constantly stirring.


Spread half the topping on a cool cake; sprinkle with pecans; spread the remaining topping.

This recipe was written by Grandma Powers (Hattie Potts Powers) in the margin of her cookbook. She was ahead of her time--she had little interest in the "new" processed and pre-packaged foods favored by many home cooks of her time. Cake mixes never darkened the door of 531 E Washington St. The suspicious-looking and yucky tasting carrot juice which came out of her juicer was an example of her dubious practices. She canned vegetables from the family garden to use when their fresh vegetables were out of season. I helped her feed the chickens and gather eggs in the chicken yard, where a red chicken house resided. Honey with the comb was her daily sweetener, or molasses, or jelly from their grapes. But, white flour and sugar were used for baking her elegant layer cakes. My grandpa had his own thoughts about layer cakes. For his birthday a "Jelly cake" was in order. Each layer was cut in half to make two. So, instead of a three layer cake, it became six layers. Instead of frosting, which my grandfather didn't like, each layer was slathered with homemade grape jelly.
