Lightly dust each side of the steak with Montréal Seasoning

Set the grill to medium-high temperature (i.e. can hold hand 4" above the grill surface for 2-3 seconds)

For medium-rare - 1 minute per side per quarter-inch of thickness
(A medium-rare 1-inch thick porterhouse would cook for 4 minutes per side)

Let it rest for a few minutes after cooking
