Garlic Roasted Brussel Sprouts Recipe

2 pounds fresh Brussel sprouts (cut in half lengthwise)
1 medium red onion, chopped
6 cloves garlic, chopped
1 tsp salt
1 tsp pepper
2 T Extra Virgin Olive Oil
8 slices uncooked thick cut bacon (cut into 1/2 inch strips)

Preheat oven to 425
Line sheet pan with aluminum foil
Spread Brussel sprouts, onion and garlic on pan
Sprinkle with salt and pepper
Drizzle with olive oil
Toss until everything is well coated
Spread them out to single layer and sprinkle bacon pieces evenly over top
Bake 20-25 minutes until "fork tender"
