1 c. Crisco oil
2 1/4 c. sugar
3 eggs
3 t. vanilla
3 c. flour
1 t. salt
1 t. baking soda
3 t. cinnamon
1/2 t. baking powder
2 c. shredded zucchini
1 c. chopped nuts (optional)

Directions:
Directions:
Preheat oven to 350
Beat eggs, sugar, vanilla, and oil. Add all dry ingredients, mix well. Add nuts and zucchini. Pour into two greased loaf pans. Bake for 45 minutes to 1 hour (until toothpick comes out clean).
