3 lbs. fresh-frozen spinach 1 c. medium white sauce
1/2 c. shredded cheese (Cheddar or American)
1/2 c. fine dry bread crumbs


WHITE SAUCE:
2 tbsp. butter, melted
1 c. milk
2 tbsp. flour
1/4 tsp. salt, dash pepper

Directions:
Directions:
Cook spinach then drain reserving liquid. Chop spinach. Make white sauce, using reserved spinach liquid. Add cheese to hot sauce and cook until cheese is melted. Combine spinach with sauce. Bake in a greased 1 1/2 quart casserole with bread crumbs on top. Oven at 350 degrees, bake for 15-20 minutes. Serves 6.

Medium white sauce - melt 2 tablespoons of butter in a saucepan over low heat, stir in 2 tablespoons flour, slowly add 1 cup of milk, stirring to blend. Cook until sauce thickens, stir in 1/4 teaspoon salt and dash pepper.
