1 pound dried red beans
7 cups water
1 green bell pepper chopped
1 medium onion chopped
3 celery stalks chopped
pound andouille sausage sliced
2 tablespoons creole seasoning
garlic to taste ( 1-2 cloves)

Hot cooked rice
Green onions for garnish

Directions:
Directions:
Mix all ingredients except rice in a crock pot. Cook on high for 7 hours or until beans are tender. Serve with hot cooked rice. Garnish, if desired. Yield - 3 Quarts.
