4 xl eggs
1 c. whole milk
1 c. flour
1 T. sour cream
1 t. vanilla
1/4 t. salt
1/4 c. sugar
2 T. melted butter

Cheese Filling
1 8oz. cream cheese, softened
1 pkg.Farmer Cheese. 7 1/5 oz. softened
2 egg yolks
2 T melted butter
1 t. vanilla
3 T. sugar
1T. cinnamon
Combine cinnamon and sugar

Directions:
Directions:
Prepare all ingredients. Sift four, sugar and salt together. Whip eggs. Add milk. Beat to combine. Add sour cream and vanilla. Slowly add in the flour and salt mixture. Mix until smooth Heat an 8" fry pan. Brush the pan with the melted butter. Using a ladle add about 3/4 ladle to the frypan and twist to cover. Heat over low heat until you just see it start to bubble underneath. Turn out on wax paper and continue the process until all the batter has been used. Should make 12 -14 shells. Fill with whatever filling you choose. I use cheese filling, recipe to follow. Put 3 T of filling in the center of the shell. Fold both sides over the filling, then top and bottom to make a nice package. Place in a buttered 13x9" pan. Refrigerate until either baking at 350º for 20 min. or fry them in a little butter, flipping to fry on each side. If baking butter tops with some melted butter or use an egg wash to give them some color.
Serve with sour cream or berries or both.

Cheese Filling:

Combine all ingredients in mixer until fairly smooth. Use a Tablespoon to measure into the shells and following the folding instructions above.
