5 oz. Boneless, Skinless Chicken Breast, cut into 1-inch cubes
1 tsp. Olive Oil
2 tbsp. Lemon Juice
cup Red Onions, thinly sliced
1 tsp. Paprika
1 tsp. Mrs. Dash
1 cup Bell Peppers, cut into 1-inch cubes
1 cup Green Zucchini, cut into 1-inch rounds
Sea Salt, if desired for taste
3 Wooden Kabob Skewers, soaked
Nonstick Cooking Spray

Mix together olive oil, lemon juice, red onions and paprika in a medium size bowl, then place chicken in the bowl and marinate for 30 minutes. Remove chicken and season with Mrs. Dash, then place chicken onto the skewers with the bell peppers. Grill or Broil until cooked through, about 8 minutes. Arrange zucchini slices onto a baking sheet, season with sea salt and spray with nonstick cooking spray. Bake at 375 for 12-15 minutes or until soft.
