10 cups zucchini, peeled
5 cups onions
1 cup celery
3 green peppers
2 red peppers
1 cup pickling salt
2 tsp turmeric
1 tbsp dry mustard
3 tbsp celery seed
6 cups sugar
5 cups white vinegar
3 tbsp cornstarch

Directions:
Directions:
Dice, mince, or chop the vegetables (whatever you prefer). Prepare all vegetables. Combine with salt. Allow mixture to stand overnight. Drain thoroughly and rinse, then drain again in a colander. Press plate down on top of vegetable mixture to force out as much liquid as possible. In a large enamel pot, combine turmeric, mustard, celery seed, sugar, vinegar, and cornstarch. Add vegetables and bring to rolling boil. Reduce heat and boil gently for 20 minutes. Ladle relish into hot jars and seal.
