1 cup water
cup butter
1 cup flour
4 eggs
1 pkg. regular vanilla pudding or pie filling

Directions:
Heat oven to 400 degrees. Heat water and butter to rolling boil in 2 quart saucepan. Stir in flour. Stir vigorously over low heat until mixture forms a ball, about 1 min. Remove from heat; add eggs. Beat until smooth. Drop dough by scant cupfuls onto ungreased cookie sheet. Shape each into a finger 4 inches long and 1 inches wide with a spatula. Bake until puffed and golden, 35-40 mins.; cool. Prepare pudding and pie filling as directed on package; cool. Cut off tops of eclairs; pull out any filaments of soft dough. Fill eclairs with pudding. Replace tops; drizzle with Chocolate Glaze. Refrigerate until ready to serve.

Chocolate Glaze
Heat 1 oz. unsweetened chocolate and 1 teaspoon butter over low heat until melted. Remove from heat; stir in 1 cup powdered sugar and about 2 tablespoons hot water. Beat until smooth.
