2 cups sugar
3 cups flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
2 cups grated carrots
1-1/3 cups vegetable oil
2 eggs, beaten
1 cup crushed pineapple, drained
1 teaspoon vanilla extract
1 teaspoon lemon extract
½ teaspoon almond extract

Directions:
Directions:
Combine dry ingredients in large mixing bowl. Add carrots, vegetable oil, and eggs. Beat until well blended. Add other ingredients and mix well. Place batter in two large 9” cake pans or one 9X13 pan which has been greased and floured. Bake @ 350 degrees for approximately 1 hr. Cool.

Cream Cheese Frosting:

1 8 oz. pkg. cream cheese
½ stick of butter
1 box powdered sugar
1 teaspoon vanilla extract

Combine all ingredients until well blended.
