2 lb sweet potatoes
1/2 c. maple syrup
2 tbsp bourbon
1 tbsp melted butter
2 eggs, beaten
1 tsp vanilla

Directions:
Directions:
Cook sweet potatoes until tender. Peel and mash coarsely. Combine with maple syrup, bourbon, butter , eggs and vanilla. Spoon mixture into a shallow, buttered 2-quart casserole dish.

Preheat oven 350 . Sprinkle topping over mixture and bake for 30 minutes.

1/4 c. all-purpose flour
1 tbsp melted butter
1/2 c. chopped pecans

Combine lightly with a fork in bowl. Sprinkle on top of potato mixture.
