equivalent of 1 chicken cut up (boneless)
6 strips bacon
6 small onions
2 garlic cloves
2 cans chicken broth (or bouillon cubes equivalent)
fresh mushrooms
2 shaved carrots sliced
1 c burgundy wine
1 bay leaf
1/2 t thyme
parsley
flour
salt & pepper to taste
cooked rice.

1. Put flour, salt and pepper inside baggie and shake chicken pieces - one at a time.
2. Using 8" deep pot - fry bacon, remove and set aside.
3. In bacon fat fry chicken on both sides until golden brown and set aside.
4. Brown onions and garlic in bacon and chicken fat and leave in pot.
5. In pot, combine chicken, bacon, chicken broth, wine, spice, mushrooms, carrots, salt & pepper.
6. Cook 1 1/2 hours. Serve over rice.
