1 1/2 c. white cornmeal 3 T flour 1 tsp salt 1 tsp soda 2 c. buttermilk 1 egg 3 T very hot bacon drippings
Preheat oven to 450º
Combine all ingredients, adding bacon drippings last. They should sizzle when added to batter.
Heat a a few spoonfuls of bacon drippings in cast iron skillet until smoking. Use these for the batter. Leave the rest in the skillet and pour the batter into the very hot pan. Bake for 20-25 minutes until golden.
