1 lb. ground turkey
1 cup celery
16 oz. canned tomatoes, chopped
16 oz. can red kidney beans, rinsed and drained
8 oz. tomato sauce
6 oz. V-8 juice
1 bay leaf
2 TBSP onion flakes
1 tsp. basil
1/2 tsp. beef bouillon
1/2 tsp. cumin
1/4 tsp. crushed red pepper
1/4 tsp. garlic powder

Directions:

Spray a large skillet with cooking spray. Add turkey and celery. Cook until turkey is no longer pint, stirring to break up pieces.

Stir in tomatoes, beans, tomato sauce, juice cocktail, bay leaf, onion, basil, bouillon granules, and spices. Bring to boil, reduce heat and simmer, uncovered for 20 minutes stirring occasionally.

Add more V-8 juice if too thick. Discard bay leaf. Serve sprinkled with cheese.
