1/2 pound lean ground beef
3 tablespoons taco seasoning mix (1 package)
15 oz. can chili with beans
1/2 onion, chopped
1 medium tomato, chopped
1 can corn, drained - optional
1 flour tortilla cut into strips
4 cups chicken broth
1 cup cheddar cheese, grated
2 cups crushed tortilla chips or Frito chips

Brown ground beef over med-high heat in Dutch oven and drain off fat. Add taco seasoning and stir well for 1 minute. Then add chili, onion, tomato, and flour tortilla strips, stirring well. Add chicken broth and bring to a boil.

Simmer for 10-15 minutes, stirring occasionally.

Serve in large soup bowls topped with cheese and tortilla chips.

If desired also garnish soup with chopped avocado and a dollop of sour cream.

This can be made vegetarian by vegetable broth instead of chicken broth and using vegetarian chili with beans.
