10 ounces tomato juice or V8 original vegetable juice
1/2 cucumber, chopped
1/2 green pepper, chopped
1⁄2 cup sweet onion, chopped
1 medium tomato, seeded and chopped
1 tablespoon minced garlic
1/4 cup red wine vinegar
1/4 cup olive oil
1 teaspoon salt - optional
1⁄4 teaspoon pepper - optional

Remaining ingredients:
20 oz. tomato juice or V8 vegetable juice
1/2 chopped cucumber
2 medium tomatoes, chopped or 2 cups canned diced tomatoes
1 red bell pepper, chopped

Directions:
In the bowl of a food processor or in a blender, combine the first set of ingredients. Season with salt and pepper to taste.

Pulse in blender on puree setting until all ingredients are blended well; mixture will have a nice speckled, colorful texture.

Pour into a large bowl and add the rest of the tomato or V8 juice, and remaining chopped vegetables. Garnish with croutons and chopped green onions if desired.

Notes: Stir mixture together and check seasonings, adding more salt if needed. Chill soup for at least a couple of hours; soup needs to be very cold and served cold!

I like to add a few dashes of Tabasco to mine to spice it up!
