1 cup instant rice
2 cup milk, divided
tsp. salt
tsp. cinnamon
⅛ tsp. nutmeg
cup sugar
cup raisins (optional)
2 eggs slightly beaten
tsp. vanilla

Directions:
Directions:
Combine rice, 2 cups milk, salt, cinnamon, nutmeg, sugar and raisins. Bring to a rolling boil, stirring constantly. Reduce heat, boil slowly 10 minutes, stirring occasionally. Mix eggs with remaining milk. Slowly add to hot mixture, stirring constantly. Cook over medium heat until thickened. Add vanilla. Let cool 10 minutes.
