1 pork loin
4 large cloves of garlic
2 tbsp of rosemary
1/2 tsp salt
1/2 tsp pepper
1/2 cup of olive oil
2 chopped carrots
1 chopped celery stalk
1 cup dry white wine

Directions:
Directions:
Preheat oven to 325º
Make a past with garlic, rosemary, salt and pepper. Put 1/2" slits in top of the loin, stuff with the paste.
Rub olive oil all over roast and cook for 1 hour.
Add carrots and celery, cook until meat reaches 155º
Take out roast and wrap in foil.
Add wine to drippings to make gravy.
