Cake:

1½ cups flour
1 cup sugar
¼ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 cup water
1 teaspoon apple cider vinegar
½ cup canola oil
1 teaspoon vanilla

Cheese:
8 ozs cream cheese, slightly softened
1 egg yolk (only add spoonfuls of white if needed to make cheese mixture thin enough to swirl through cake with a knife)
½ cup sugar
6 ozs semi-sweet chocolate chips
1 teaspoon vanilla

Directions:

Preheat oven to 350º
Prepare 9½" springform pan--cover detachable bottom with foil; fold extra foil up to avoid leakage; spray well with Pam.
Bake 50 minutes or until lightly brown and set

Cake:

Beat all cake ingredients at medium speed in a mixer bowl.

Pour cake batter evenly in the pan.

Cheese:

Beat cream cheese, yolk, sugar, and vanilla until light and fluffy; add chocolate chips. Cheese must be the consistency which will make it easy for a knife to pull the cheese mixture through the cake batter.

Final step:

Drop cream mixture by tablespoonfuls on top of the cake batter, being sure to get some of the cheese toward the outer edges of the cake.

Swirl/drag the cheese mixture through the cake batter to make a marble design. Score the swirls several times with the knife, pulling down in a straight line.

Cool for 15 minutes in the pan; move to a cooling rack.

Sam delivered these cakes to several delis and cafes in Houston. I baked as many as six a day.

That was then...if I baked deserts in my home kitchen in 2018 I would probably be jailed and local TV would delight in showing me being taken off in chains. Health regulations make such enterprises impossible now.
