1 Refrigerated Pie Crust
4 Slices Bacon, diced
3 Tbsp. Butter
5 cups Onions, thinly sliced
1 Tbps. Cooking Sherry
4 Eggs
1 cup Milk
1 Tbsp. Mustard
1/4 tsp. Nutmeg
1/2 tsp. Salt
1/4 tsp. Pepper
1 cup Swiss or Gruyere Cheese, shredded

Preheat oven to 375º. Fit crust to 9 inch pie plate, loosely cover with plastic wrap and refrigerate.
In a large skillet, cook bacon until crisp and set aside. Melt butter in bacon grease and sauté onions for about 35 minutes, stirring often. Add bacon and sherry to onions and cook for 10 more minutes. Set aside to cool for about 15-20 minutes.

In a bowl, whisk together eggs, milk, salt, pepper, nutmeg and mustard. Remove the pie crust from the refrigerator and sprinkle cheese on the bottom of the pie crust. Scatter onion mixture on top of the cheese. Pour egg mixture over the onions. Cover with foil and place in oven. Bake for 30 minutes then remove the foil. Bake another 15-20 minutes until the eggs are set and crust is brown.
