Calico Salad Recipe

Ingredients:  
Ingredients:  
1 lb macaroni elbows or shells
1 tsp grated onion or 2 TBS chopped chives
1 C diced celery 2/leaves
1 C minced parsley
½ C chopped stuffed olives (I slice) green and black
¾ tsp salt (be careful the olives are salty, you may want to use less)
freshly ground black pepper
3 TBS sour cream or mayo
2 TBS chopped pimento
1 TBS salad oil
1 ½ TBS lemon juice

Directions:
Directions:
cook macaroni, drain and rinse in cold water

beat salad oil and lemon juice together. Combine w/cooked pasta & chill several hours or overnight.

Toss w/pasta a mixture of:
grated onion (or chives), celery, parsley, olives, salt, pepper sour cream and pimento.

Can be served on lettuce or in a tomato aspic ring.

Got this years ago from my good friend Michele Mccormick. I am not a fan of pasta salad but I love this version.
